High-bush blueberry. The cultivated varieties of blueberry growing, not surprisingly, on high bushes anything up to 4.5 meters (15 ft) high. These are the blueberries most commonly seen. The rabbit-eye or low-bush varieties are wild varieties producing smaller fruit.
Highland Burgundy Red is a variety of potato which has red skin and flesh which it retains during cooking. Long and oval in shape, there is a russet layer over a bright burgundy red skin. Good for steaming, roasting or simmering and especially for a bright mashed potato.
A log or tub of fresh cheese made with cow’s milk and enriched with cream. It is a fresh white cheese similar to cottage cheese, but stronger. It is made in Scotland by Susannah Stone of Highland Fine Cheeses in Ross and Cromarty with raw, skimmed milk. It is made without rennet so is suitable for vegetarians. It weighs 125 g (4½ oz). Sometimes it contains caraway seeds.
