Grand Alexander apple

Alexander. A variety of good-looking, large, red-flushed blushed, dual-purpose apple with white flesh from the Ukraine, known in the 1700s. It was introduced commercially into England in 1805 by James Lee of a nursery in Hammersmith and sent on to Massachusetts in 1817. Cooks to a lemon-coloured purée. This mid-season variety is picked from mid-September in South-East England and has poor storage properties though may be eaten until late October. In the United States it is picked from August. Many apples were taken from Russia to various northern parts of the world in the early 1800s to see if they would be cold hardy.

A variety of flushed blushed, striped all-purpose apple raised some time prior to 1829 by James Grance at Kingsland in Middlesex but introduced commercially by Dickson's of Chester. This late-season variety is harvested from early to mid-October in South-East England and is at its best from November to December. Retains its shape when cooked.

Granny Smith apple

A versatile hard, green apple that keeps well. It is usually thought of as an eating apple but is particularly suitable for cooking, being tart and refreshing and only moderately sweet. It is sweeter if tree-ripened. Its hard, crisp, greenish-white, juicy flesh retains its shape when cooked. The skin is tough and a bright, deep green with a waxy finish. This apple arose with Mrs Anne Smith of Ryde in New South Wales, possibly from a French Crab pip. It is recorded from 1868 and arrived in the United Kingdom by 1930s. It is widely grown, but not in the UK where it is too cold. This late-season variety is harvested from mid- to late October is stored and is at its best from January to April.
