A variety of cauliflower created in hopes that the purple colour will be perceived as more appetising than white by the British public.
A name for Royal Jubilee, a large variety of yellow-skinned cooking apple raised by Mr John Graham of Hounslow in Middlesex in 1888. It was introduced commercially in 1893, the Jubilee year of Queen Victoria, hence its name. It retains its shape when it is cooked, making it good for tarts. This mid-season variety is harvested from late September in South-East England and is at its best from October to December.
Graham crackers are similar to what are called digestive biscuits, made with wholemeal flour, in the United Kingdom.
Coarsely milled wholemeal flour from which the bran and wheat germ are extracted, finely powdered and then reincorporated. Sylvester Graham, after whom this is named, was appalled at the lack of nutritional value in white bread and campaigned vigorously in Boston in the late 19th Century to have wholemeal bread provided for the poor. His name has become synonymous with wholemeal flour in many countries.
Grains of paradise are the ppery seeds of either of two African zingiberaceous plants related to the cardamom. They are indigenous to the coast and islands of tropical West Africa, previously known as the Melegueta or Pepper Coast. Used as stimulants, diuretics or condiments they were named after the African empire of Melle. Sold at Lyons in 1245 when it was known by the name "Grana Paradisi". The Welsh physicians of Myddvai at this time knew it as Gawn Paris. Queen Elizabeth I had a predilection for them. King George III banned their importation in an effort to protect the pepper trade. Scandinavian contries however continued their trade from their colonies in West Africa. Other species of Afromomum are also confusingly called "Grains of Paradise" and these include - Madagascar Cardamom (A. anguistifolium) and Black Amomum (A. granum-paradisii).
Guinea pepper. A spice from Africa sometimes used as a mild pepper substitute and with a flavour slightly reminiscent of cardamon. The pods are crushed and added whole to soups or stews, then removed before serving any food.
Gram usually means "whole" when referring to pulses. However, gram dhal or flour specifically refers to the fine, pale yellow chickpea flour made from channa dhal, split chickpeas (US: garbanzo beans) (the ones which resemble yellow split lentils). It is used to make pakoras and for binding dishes such as kebabs as well as making excellent batter.
