A variety of beef cattle. It does not provide tender meat, but it has an elegant, complex flavour. Galloway cows have thick coats so fat remains dispersed throughout the fibres of the meat rather than racing to the extremities to provide protection.

A moist, crumbly fresh cheese made from unpasteurised goat's milk cheese. Good for spreading. It is marinated in olive oil, herbs and garlic. It is also available as a disc, coated in yellow wax. A smoked version is also available.
