Haddock smoked, originally, over peat at Finnan near Aberdeen. They have been widely reproduced. To smoke haddock, it is first gutted, cleaned and split before being brined and then hung up to drain. It is then smoked until it develops a straw colour. They darken after they process has been completed.
Finnish Blue Congo is a variety of potato with purple marbled flesh., which makes violet mash.
When people visit Finland, their first impression is of a land with thousands of lakes, surrounded by pine forests. This, of course, means that freshwater fish, particularly perch, is popular. Another popular fish is the Baltic herring which is often pickled but is treated in almost every way imaginable.
A short variety of chilli tapering from wide shoulders, and coming in red, green or purple grading to white, almost like a tiny aubergine (US: eggplant).
Atlantic rock oyster. A variety of oyster up to 15 cm (6") in length found on the American side of the Atlantic. Unlike many oysters this is usually cooked, served on the half shell. This is because it is quite a fatty oyster, particularly when large, which is improved by cooking. All down the eastern seaboard the Atlantic oyster is called after the area in which it is found, e.g. the Long Island oyster, Chesapeake Bay oysters and so on. The best known is probably the bluepoint.
The grower's name for new potatoes. They are planted from February onwards and harvested while the skins are still flaky. Peak season is May-June. Almost any variety of potato can be treated in this way, but some are more successful. Among the best are Jersey Royals.
