Estima is a second early waxy potato with pale yellow skin and flesh. Ideal for baking. It is also suitable for boiling, mashing, roasting and for making chips (US: fries).
Guinea pepper. A spice from Africa sometimes used as a mild pepper substitute and with a flavour slightly reminiscent of cardamon. The pods are crushed and added whole to soups or stews, then removed before serving any food.
A short, tapering variety of chilli which comes in red and green.
