The Dover sole is a firm, white flatfish. The high reputation of this fish in Europe means that its English name of Dover sole has been appropriated for a quite different fish of the Eastern Pacific, Microstomus pacificus, which is less firm.
Yellow cracked bolete. A type of edible mushroom found in autumn.
The dragon fruit or pitaya is a striking purplish red or yellow fruit from Central America, twice the size of a passion fruit. It is pithy inside with an an unnaturally white sweet jelly with black pinpricks of edible seeds. I think it looks and tastes unnatural.
Draining spoon. This is generally a large kitchen spoon with holes in it useful for lifting foods from cooking liquor so that the liquid can drain away. My mother-in-law is the best potato cook in the world, judging each potato as it becomes properly cooked and then lifting it from the boiling water with a draining spoon.
Because it’s flavour is so good, the edible crab will usually be presented plainly dressed. Dressed crab is crab that has been picked from the shell and claws, the brown and white meat kept separately, and then replaced in the shell and served with a light dressing. In the United Kingdom it is traditionally served with brown bread (US: wheat bread).
