Coronation chicken was a dish devised by Rosemary Hume for the Coronation of Queen Elizabeth II in 1952. Apparently the inspiration for this dish was Queen Adelaide, the wife of William IV (uncle of Queen Victoria). She particularly enjoyed sandwiches spread with apricot butter and curry and filled with chicken in a cream sauce.
