An ale-based drink made from heated ale mixed with beaten eggs and sugar, whisked until frothy and served in fireproof mugs with grated nutmeg. May also have butter and cloves included.
A soft cow's milk cheese from the Jerseys who graze in the Scottish Borders. It has a mild, creamy flavour. It is one of a few British cheeses to have obtained a PDO (Designation of Protected Origin). This was a Bronze Medal winner at the British Cheese Awards.
Bones are the hard matter of the skeleton, often containing delicious bone marrow. Meats, poultry and fish cooked 'on the bone' (ie not filleted) often have better flavour.
Little tunny. The little tunny is a handsome fish with black scribble patterns on its back. It has a robust, torpedo-shaped body built for powerful swimming and it has no swim bladder. The mouth is large, the lower jaw slightly protruding past the upper jaw. The flesh of the little tuna is darker and stronger tasting than that of the other large tunas. It is marketed fresh, dried, canned, smoked, or frozen. It is often caught on hook and line near reefs.
