Beluga. A variety of sturgeon found in the Caspian sea, the Black Sea and rivers around them. Belugas are one of the largest sturgeons and can live for up to 100 years though they are usually caught much younger. One fish can provide up to 20 kg (44 lb) of beluga caviar.
"Boneless birds." Veal birds or beef olives, made with meat that is beaten until it is thin, stuffed with minced (US: ground) pork, onions and parsley, rolled, cooked and served with a spicy sauce.
Bergamot. A herb of the mint family with finely toothed, dark gree, lemon-scented leaves can be added to salads, tisanes and fruit cups.
