"Bread and butter." Open sandwiches consisting of one slice of bread topped with meat, fish or cheese and not covered with another piece of bread.
Powan. Whitefish. Houting. Vendace. A small relation of char or lake whitefish and is a slightly oily freshwater fish of northern Europe, prepared in the same way as trout. It can be baked or fried.
Schnapps. Eau-de-vie. Broadly applied to all the principal indigenous spirits of the Scandinavian countries. This is a colourless, grain or potato based spirit. The best known brand in the world is Danish, but it is produced throughout Scandinavia. It is flavoured with cumin and aniseed or fennel. It should be served really very cold and is often drunk with beer before or after a meal.
"Snails." Danish pastry dough rolled out, coated with butter and currants, rolled like a Swiss roll and then cut into slices before baking.
