Calisay

A speciality of Catalonia and a liqueur well known throughout Spain. It is made in Barcelona to a recipe which is said to have originated in Bohemia. Calisay is a slightly syrupy, quinine liqueur. It is sometimes chilled as an apéritif but works better as an after dinner drink. It is also used in desserts and cakes.
