A way of cooking meat in Mallorca, with onions and garlic in oil and stock, stewing very slowly until the liquid is completely taken up or evaporated.
Spurdog - a type of small shark or dogfish, said to make the best eating of all the dogfish. Also known as rock salmon. It is useful for its medium oily white flesh and is generally versatile. It grows 2-3 metres in length.
"Needle." Garfish. A striking, beaked, marine fish up to 60 cm (2 ft) long, with a backbone which turns bright green on cooking and a delicious flavour, found on most European coasts. It is also puff pastry and means semi-sweet when applied to wine.
Blenny. A small, scaleless, migratory fish about 10-15 cm (4-6 inches) long with mild, white flesh which can be cooked in the same way as whitebait or used in soups. More commonly refers to a hare.
Hedgehog fungus. Cream-coloured mushrooms, excellent to eat, easily found in woods from late summer to late autumn (US: fall). They have a sort of downy white stem leading up to a cap which is centrally depressed and under which are masses of little spines, giving the mushroom its English name. It is quite a good mushroom to collect as it is easily distinguished from other mushrooms, is a relative of the chanterelle, and, like it, has good flavour and good retention of texture on long cooking.
