"Nerves salad" Calf's foot and knuckle marinated and then boiled. It is then cooled and cut into slivers and served with slices of raw onion, vinegar and olive oil, usually with parsley. It goes well with borlotti beans (US: cranberry beans). A speciality of the Veneto and Lombardy.
