Casu Becciu

/KAH-soo BEH-chyoo/
[Italian]

A pungent, crumbly cow or goat's milk cheese from the Gallura region of Sardinia, with a smell living up to its usual name of Casu Marzu, or rotten cheese in the local dialect, and also so named because of the small black worms which live in the cheese.
