Shaggy ink cap. A type of fungus which is edible when young. The cap overhangs so that, rather than the more common round cap, the shaggy ink cap has an elongated ovoid shape. It has shaggy scales which, when young, are white but which become darker with age. As it ages it becomes quite unpleasant to eat and eventually dissolves into a puddle of black liquid, giving it its English name.
Thin-lipped grey mullet (US: striped mullet). It has a pointed snout giving it the appearance of thin lips, hence its name. It has a golden sheen.
Bonito. This is not the classic, shiny, striped bonito much used in Spanish cooking, but the much rarer bonito found on the North African coast.
"We have eaten contentment." Turkish delight. A jelly flavoured with rosewater or lemon, with chopped hazelnuts and pistachios. Authentically it should have no gelatine or added pectin and is thickened with a little cornstarch. It is usually served dusted with icing sugar.
