Lahmacun are very thin Middle Eastern pizzas, being a flatbread with a lamb topping spiced with allspice and cinnamon.
Bronze or white grouper. A large fish similar to a sea bream, generally grey in colour. May be recognised from distinctive whites lines on the cheeks. These groupers are found more in the south of the Mediterranean than the north, particularly around Cyprus.
Boiled chickpeas (US: garbanzo beans) or boiled beans, often served as a snack or available on the street.
Rascasse. Red scorpion fish. A fish similar to a gurnard, mainly red or orange in colour, with a huge, ugly head and poisonous spiny dorsal fins. The large scaly head is inedible. However, this well-flavoured fish is most famous as an indispensable ingredient of bouillabaisse. It is found in deep waters throughout the Mediterranean and as far north as Brittany. Large fish may be baked, providing firm white flesh.
"Contentment." Turkish delight. A jelly flavoured with rosewater or lemon, with chopped hazelnuts and pistachios. Authentically it should have no gelatine or added pectin and is thickened with a little cornstarch. It is usually served dusted with icing sugar.
