Green curry
A sour and spicy green bamboo shoot soup or stew flavoured with yanang leaves, chillis and citric acid, often with mushrooms.
"Red curry." Hot curry.
A dish made with roast duck with red curry sauce, coconut milk, pineapples, tomatoes and Thai basil.
Chicken. Either a hen or a cock.
"Roast chicken." A spatchcocked chicken is marinated in garlic, turmeric, coriander (US: cilantro) and fish sauce and often other commonly available spices. It is barbecued slowly over a charcoal flame.
