Creamed shellfish made with the meats of lobster, crayfish, crabs and/or prawns cooked in stock with double cream (US: heavy cream) and brandy with cayenne and cloves. They are heated gently without boiling to prevent them from becoming tough.
Sprat. A small, sardine-like fish of the herring family, which is widely distributed in the north-east Atlantic and the North Sea, and is cured and tinned for use as food.
Purple sandpiper. Half way in size between a knot and a dunlin, this is another coastal wader which lurks in the rocks.
