Salt cod fried with garlic, to which is added vinegar, paprika and chopped parsley. The resulting dish should be pale in colour. It can contain beaten egg.
"Salt cod in the style of La Mancha." Salt cod flaked and baked in a sofrito made with roasted red peppers and topped with eggs.
"Salt cod in the style of Navarre." Salt cod poached and served with a sofrito containing red peppers.
Salt cod mashed with garlic, olive oil, milk or cream and truffles into a thick, tasty purée, served warm.
"Salt cod in the style of Valencia." Salt cod baked with a sofrito made with rice, green peas and red peppers.
"Salt cod in the style of Vizcaya." Salt cod poached and layered with mild red chillis called ñoras, onion and garlic purée, cubes of bread, ham or sausage, and baked. Outside the Basque country this dish is more likely to include tomatoes. Popular in Cuba.
