Asturias is a region of north western Spain which used to be a kingdom in its own right. It is known as the dairy of Spain and produces an eponymous cheese and ham. Simple vegetables are of very high quality if you buy what is local and seasonal. The cuisine is basic but, as always, where fresh local produce is treated with esteem, of excellent quality.
A purée of salt cod with potato and pine nuts or walnuts, rather similar to brandade. It is served on the east coast. It is also a rabbit stew with lots of garlic.
A small, butter-smooth, sweet, yellow to deep golden variety of mango. Very different from the Alfonso which it resembles.
Fruit paste, often quince or guava, very sweet and served with a slice of cheese or on its own as a dessert throughout Latin America and the Middle East.
Liquor made with milk and/or water and masa harina (cornflour (US: corn starch) treated with lime) and boiled to make a kind of thin breakfast porridge. It can be sweetened with honey or sugar and flavoured with cinnamon, walnuts and coconut or fruit. It can be served either hot or cold.
