Potatoes au gratin. Sliced potatoes baked with cream and browned on top. Cheese and eggs are sometimes added.
"Poor man's potatoes." Sliced potatoes fried with garlic, chilli and a bay leaf, layered in a dish with Manzanilla, covered and baked.
Pâté de foie gras. Pâté made from the liver of a duck or goose which is force fed with sweetcorn, maize.
Pintail duck. A widely-distributed, and very elegant, species of duck, of which the male has the tail of a pointed shape, the two middle feathers being longer than the rest.
