"Table cloth stainer." A dish made with a jointed turkey or chicken, in some cases pork, and chorizo, fruits such as peaches, apples or pineapple and tomatoes, all cooked in stock thickened with a purée of different types of chillis, including ancho, poblano and serrano, almonds and sesame seeds.
Mandarin oranges. A small orange citrus fruit with skin which can be easily removed and segments which can easily be taken apart. The mandarin and the tangerine are the same thing.
Mangosteen. Lychee like, white, segmented flesh is surrounded by a hard purplish skin. This round fruit has four well-defined sepals.
A caramelised sugar and milk mixture most easily produced by boiling a tin of sweetened condensed milk for two hours, as is used in banoffi pie.
