Arbutus berry, the sweet-sour fruit of the strawberry tree. Madrid was formerly surrounded by arbutus groves and has a strawberry tree and a bear on its coat of arms.
Aged. Mature. Refined, Developed. This can mean ripe, aged or seasoned in reference to cheese, wine or meats. It means mature when used in a complimentary way but be cautious as it can also mean stale.
Dublin Bay prawns. Norway lobsters. These are like small, elongated lobsters, pale pink when cooked, with long, narrow claws and a delicious flavour.
A soft, cow's milk cheese available throughout Spain but most commonly in Menorca. As it ages, it hardens and becomes darker in colour.
