"Tripe in the style of Murcia." Tripe stewed with chickpeas (US: garbanzo beans) and calf's feet, chorizo and ham with saffron and mint.
Beestings. Colostrum. The first liquid obtained from the mammary gland of an animal after it has given birth. It is particularly rich and creamy and clots when heated. It is used for desserts and puddings. It is sometimes used to make cheeses but is often kept by farmers to help new born animals which are not thriving. It is also the name of a cheese.
A semihard cheese from León made from cow's beestings, made from spring to summer and matured for two months. It has a greyish-white, smooth paste, often dry, cracked and crumbly, with a hard, yellow, slightly oily rind. It has a bitter flavour.
Prawn. This may refer to either the prawn (US: shrimp) or brown shrimp, a variety of common shrimp which grows up to 6 cm (2½ inches) long. It is found on sandy shores.
Common prawn (US: shrimp). A large reddish prawn. These are translucent when raw but become pink on cooking.
A freshwater prawn which shelters under boulders and stones.
