Grenadier or rat-tail; a long, tapering, ash grey marine fish found up to 90 cm (36") long, deep in the Atlantic. Not a very attractive fish and difficult to skin and fillet, so good in soups.
Whitefish. Vendace or houting. Small relations of char or lake whitefish and is a slightly oily freshwater fish of northern Europe, prepared in the same way as trout. They can be baked or fried.
Bluemouth. A type of rascasse from deep North American waters and the western Mediterranean. It has a blue flash on the gill covers and enormous eyes. It is an unsightly fish with good flavour and is used in bouillabaisse and other fish soups.
Golden grey mullet. A fish from the grey mullet (US: striped mullet) family. It has gold spots on its head and at the front of the body.
