A regional name for chickweed. A plant which grows wild near streams and on wasteland and may be eaten raw in salads, cooked in the same way as spinach or used to make soup.
Rascasse or black scorpion fish. This is a smaller and less glamourous fish than the red scorpion fish, and is well camouflaged, in blacks, greens and browns. However, it is just as useful in a bouillabaisse.
Golden grey mullet. A fish from the grey mullet (US: striped mullet) family. It has gold spots on its head and at the front of the body.
A soured cream similar to crème fraîche, but much heavier and thicker with usually 36% to 42 % milkfat or even higher, and more sour in flavour than crème fraîche. It has good cooking properties as it does not curdle when added to hot foods.
