Minho is a former region, now province of north west of Portugal including some parts of what is now Braga and Viana do Castelo. Minho is bounded by the sea to the west, Spain to the north and the rivers Douro and Minho. It is noted for the production of the young, refreshing Vinho Verde. The fertile valleys are densely populated but produce wheat and maize, while sheep are pastured in the mountainous northern region on the border with Spain. Caldo verde is a renowned dish of this province.
