A type of comber fish. Painted comber or lettered perch, more common in the Mediterranean than in the Atlantic. A bony fish with very good flavour, useful for soups or cooked whole. The skin looks almost as if it has been written on.
Smelt. A fish of the salmon family often served tossed in flour and fried. Fresh from the water, they are said to smell like cucumber.
A salad made with shredded beetroot (US; beet), carrots and celeriac (US: celery root) and dressed with lemon juice and sugar.
