Kippers are layered with slices of onion and potatoes and covered with an egg and milk mixture before baking for about an hour.
Potatoes and herring. Boiled potatoes are drained leaving some of the water still in the pan. Salt herrings are washed and then placed on top and steamed over a gentle heat and served with sliced raw onions. Traditionally a glass of cold buttermilk is drunk with this dish.
