Monosodium glutamate. This is used as a flavour enhancer in Chinese and Japanese cookery but should be used sparingly. In Chinese markets it may be called mei jiung.
"Grilled chicken." A spatchcocked chicken is marinated in garlic, turmeric, coriander (US: cilantro) and fish sauce and often other commonly available spices. It is barbecued slowly over a charcoal flame.
