Spider crab. This is a crab with little meat but what it has is well-flavoured. It has a large, oval spiked body and long, thin spidery legs, hence its name.
This is specifically a rich meat sauce of slowly cooked beef or veal mince (US: ground meat) and tomato sauce. Often served with ziti.
"Ragù in the style of Abruzzo." Mutton stewed in red wine with tomatoes, garlic and herbs and served with pasta.
"Ragù in the style of Bologna." A famous ragù of minced (US: ground) veal or beef with ham stewed with nutmeg and cream or milk.
"Ragù in the style of the huntsman." Minced (US: ground) beef stewed with tomatoes in wine, with mushrooms and herbs, especially garlic.
"Ragù in the style of Naples." A sauce of fresh tomatoes, garlic, onion and olive oil. May consist of veal birds cooked in red wine and tomatoes, the sauce served with pasta and followed by the meat.
