"Almost raw." Very rare.

"Four eyes." A variety of wild duck.

"Four horns." A loaf of bread with four horns.

"Four spices." A mixture of four spices, usually nutmeg, juniper, cloves and pepper.

"Four seasons." A pizza comprising four sections, one to represent each season. The fillings might include vegetables of the season, cheese, meats and mushrooms.

Quenelle. A sort of sausage-shaped roll of very finely minced (US: ground) poultry, fish or meat bound with eggs or cream. These may be poached or fried.

Hectolitre. 100 litres, or 100 kilograms, the standard measure of wine volume in Europe.
