Hake. There are several references to 'merhuzzo' on line but I suspect that these are typos for the more correct 'merluzzo'.
A name in Basilicata for a peperoncino, a small red hot chilli from the south of Italy and used much in its cuisine. It is grown in huge quantities in Basilicata, the Marche and Calabria.
Sea bream (US: porgy, scup). A large family of fish which includes black sea bream, bogue, Couch’s sea bream (known as red porgy in North America), dentex, gilt-headed bream . They are usually sold weighing up to 1 kg (2 lb). All have a deep, narrow body, small mouth, big eyes, quite large, tough scales, a single, spiny dorsal fin and a black spot on the shoulder. They are good to eat cooked whole, stuffed and baked or braised.
An Italian variety of beefsteak tomato, deeply lobed, at its best when the shoulders are still green.
Meringue. A dessert or cake made with egg whites beaten with sugar until stiff, and then baked very slowly either to make small individual pastries or on top of a flan containing fruit or in a cake. The result can be stunning - stiff and crisp on the outside, dissolving into a wonderful chewy, almost toffee-like finish. On the other hand, it can be dry and without texture, disappearing in a dusty puff in your mouth.
