A loaf or brick of hard cheese made with cow's milk, similar to cheddar. It has a buttery, golden paste with some small holes and a thin, natural, oily rind. It is made on farms and in dairies. This cheese contains 45% fat (dry), 25% fat (total). The curds are scalded and pressed.It may be found measuring 12-15 cm long (5-6") diameter and weighing 9-12 kg (20-26 lb). The cheese is available with caraway seeds or green peppercorns. It is a good table cheese which also has good cooking properties.
