Mango ginger. A rhizome of the ginger family which smells of unripe mangoes. It is used in salads or cooked in coconut milk.

A variety of short-grain rice common in India but not elsewhere. Ambemohar also refers to other varieties of rice such as jeerasul, surti kolam, vambhog, sonachandi, siddha and sella.
Zedoary. This ginger/turmeric-like root with a flavour of unripe mango and ginger is available widely in India and Indonesia, where the leaves an shoots are also used, but hardly anywhere else. The root is dried and then ground into powder.
