Mango powder. A very sour flavouring agent with a slightly fruit flavour made from dried under-ripe mangoes, rather similar to tamarind in cooking.

Roselle. Jamaican sorrel. A 2 meter (6 ft) high plant producing peppery leaves with a flavour similar to sorrel. The small scarlet flowers are used to make jams (US: jelly) and jellies or dried and used to colour foods.
Guava. A fruit with the external appearance of an apple or pear. The large, pale, yellow-skinned, pear-shaped ones are the best. They have a very strong smell.
