Horse mushroom. Edible, and very delicious, but easily mistaken for other less palatable or even poisonous mushrooms.
The aniseed funnel cap. This mushroom has a distincive pale blue colour of young specimens soon fading towards light grey. A couple of these will impart an almost liquorice flavour to a dish. Certainly not many are required but is a food addition to soups and stews.
"Anna potatoes." Potatoes cut into thin rounds and baked in layers with butter to accompany roasted meats and poultry. They should be baked and brown on the outside, soft on the inside. They are then turned upside down, turned out of the dish and cut in wedges like a cake. Invented for Anna Deslions, 19th C courtesan.
