Bread soup. A way of using up old bread by mixing it with meat broth and often flavoured with nutmeg.
A cake made with breadcrumbs, eggs and almonds over which warmed wine is poured while the cake is still warm.
Air potato. An intrusive, but one of the most widely consumed varieties of yam cultivated in the Pacific Islands, Asia and West Africa. Uncultivated versions may be bitter and even poisonous (as in Florida).
Cassava. Manioc. Yuca. Fleshy, starchy tubers with tough brown skin and crisp white flesh, originally from Brazil but now widely cultivated. There are two types, sweet and bitter. Avoid the bitter one. Throughout the Amazon basin there are 26 varieties, each thriving under different conditions. The process of making it into flour or tapioca removes the toxins.

A smoked cheese from Bavaria produced from pasteurised cows’ milk. It is buttery yellow with a mahogany brown rind, firm texture with small holes, and a light piquant smoky taste. It is also available flavoured with ham.
