Sanguin or bloody milk cap. A mushroom quite similar to the saffron milk cap but less common. It exudes a red milk sang poivré when cut.
Beefsteak mushroom. It may be sliced and fried like liver, or eaten raw with a salad, when it should be cut into thin strips, soaked in salted water, drained and then dressed with a vinaigrette.
A type of black pudding (US: blood sausage) from Alsace. It is short and made from minced (US: ground) lean pork and pig's blood.
A type of comber fish. This one has vertical bands. A bony fish with very good flavour, useful for soups or cooked whole.
