"Beer sausage." A fat slicing sausage, dark reddish-brown in colour, of beef and pork or pork alone, with a strong flavour of garlic, mustard seed and spices. It was originally made with ham soaked in beer.
Beestings. Colostrum. The first liquid obtained from the mammary gland of an animal after it has given birth. It is particularly rich and creamy and clots when heated. It is used for desserts and puddings. It is sometimes used to make cheeses but is often kept by farmers to help new born animals which are not thriving.
Orange sauce, for wild duck or game, made from the juices from the duck flavoured with orange, lemon and finished with caramelised sugar dissolved in vinegar and julienne of orange and lemon peel.
