"Black butter." Butter heated until dark brown, with a few drops of vinegar and sometimes capers added, served especially with skate and brains.
Crowberry. A berry rather similar to cranberries but with a black skin, found growing on a shrub in the hills of northern Europe.
Black peppercorns, the fruit of a perennial vine with large leaves and white flowers. Green peppercorns are the unripe fruits picked early and pickled. Black peppercorns are picked just before they ripen and white peppercorns are the ripe, black peppercorns with the black skin flaked off. They are best kept whole and ground when required. Patagonian toothfish. A fish with a taste similar to swordfish and tuna, fished in the Southern Atlantic and Southern Ocean.
Black boletus mushroom. Excellent to eat from August to October whether raw in salads or cooked or preserved and also freezes well.
