"Consommé in the American style." A clear chicken consommé with tomatoes, celery and peppers. Can be served either hot or cold.
"Consommé in the style of Andalusia." A clear tomato consommé mixed with tomato purée and diced tomato, flavoured with tomato royale and garnished with small dumplings, julienne of ham and rice, and vermicelli and threads of egg.
"Consommé in the style of the huntsman." A clear game consommé with port and chopped mushrooms, chervil, game quenelles or with potatoes stuffed with game purée and a splash of Madeira.
