A clear chicken consommé garnished with chopped tomatoes, celery and peppers. Can be served either hot or cold.

"Consommé in the Parisian style." Chicken consommé garnished with royale, dice of carrots and turnips, french beans and asparagus tips with chervil.

"Consommé in the style of the princess." Chicken consommé slightly, garnished with pea royale,slices of white chicken meat and pearl barley.

"Consommé in the Viennese style." Consommé flavoured with paprika and garnished with llittle cheese pancakes and gnocchi, also flavoured with paprika.

"Consommé in the Hungarian style." Beef consommé flavoured with tomato and paprika garnished with chicken royale and Madeira.

Full-bodied. Developed. Often applied to wines or cheeses.

Fritter, sweet or savoury, doughnut. Any food which is dipped in batter and deep-fried.
