A variety of grape and a rather acidic wine commonly available in Burgundy, California and central Europe. Resulting white wines are dry and assertive and are a traditional base for kir or vin blanc cassis. The Aligoté grape was used in white Burgundy wines until the AC requirements led to the use of Chardonnay grapes.
