Chocolate liqueur produced in colourless and brown versions, the latter sometimes also flavoured with vanilla. The word Chouao on the label means the ca-cao beans come from Venezuela. Chouao is a suburb of Caracas. Crème de Cacao is useful in both the cocktail bar and the kitchen. It is sometimes drunk through a layer of cream.
A soup made from the carcass of a duck sweated in butter with mirepoix, flavoured with sherry, finished with cream. It is served chilled.
"Cream of blackcurrant." A blackcurrant liqueur from Dijon used in kir and kir royale. Kir is named after Canon Kir, a mayor of Dijon and a hero of the Resistance.
"Cream of chervil soup." A soup of puréed chervil root and veal velouté mixed with cream and garnished with croûtons and more chervil.
