A soft cow's milk cheese similar to Époisses but less strong. It is a strong cheese with a flavour of wine from the Chablis in which it is washed. It is made in dairies in Chablis, south west of Dijon in Burgundy and measures 18 cm (7") diameter x 3.5 cm (1 1.2 ") deep, weighing around 1 kg (2.2 lb). Affinage is 1 month.
