Blue-black, early-ripening hybrid grapes of French-American Cabernet Sauvignon descent which produce full-bodied, deep red wine which ages well.
Little tunny. The little tunny is a handsome fish with black scribble patterns on its back. It has a robust, torpedo-shaped body built for powerful swimming and it has no swim bladder. The mouth is large, the lower jaw slightly protruding past the upper jaw. The flesh of the little tuna is darker and stronger tasting than that of the other large tunas. It is marketed fresh, dried, canned, smoked, or frozen. It is often caught on hook and line near reefs.
A Provençal name for the bluemouth, a type of rascasse from deep North American waters and the western Mediterranean. It has a blue flash on the gill covers and enormous eyes. It is an unsightly fish with good flavour and is used in bouillabaisse.
Golden grouper. A brown grouper found in the eastern and southern Mediterranean. May also be a type of sea bass.
A type of sea bass. It is white-fleshed, tasty and free of bone. More likely to be a golden grouper.
Star anise. Chinese anise. A seed from a tree of the magnolia family which has a flavour reminiscent of liquorice. Stronger than aniseed, it is used in the same way.
