Brown shrimp. A small, common shrimp which grows up to 6 cm (2½ inches) long, has a soft shell and turns greyish-brown when cooked. It is found on sandy shores. It has excellent flavour.
Garfish. A striking, beaked, marine fish up to 60 cm (2 ft) long, with a backbone which turns bright green on cooking and a delicious flavour, found on most European coasts.
A large, Parisian ring-shaped yeast cake which is effectively a large baba soaked in rum or kirsch syrup and filled with confectioner's custard. Small versions can also be made. Originally known as Brillat-Savarin.
