tragedy in the Alps

This is not appropriate for this work, but I was entertained by the term. Joanna Camus told me that, at West Kirby County Grammar School for Girls in the 1950s, sloppy rice pudding or semolina with thin red jam (US: jelly) was called "tragedy in the Alps" by the girls. I particularly like the "red" jam (US: jelly).

transhumance

The transhumance is the seasonal movement of animals, accompanied by people, to find better grazing. This is most commonly to higher alpine pastures in summer and the movement back again in winter.

Traver's Pippin apple

A name for Ribston Pippin, a medium-sized dessert apple, green to golden-yellow with crimson red cheeks. One of the great apples, it as crisp flesh with great depth of flavour and aroma. It is thought to have been raised in 1707 by Sir Henry Goodricke of Ribston Hall near Knaresborough in Yorkshire from a seed brought from Rouen in 1688. It received the Royal Horticultural Society Award of Merit in 1962 and the Award of Garden Merit in 1993. This late-season variety is harvested from late September in South-East England and is at is best from October to January. It is a parent of Cox's Orange Pippin.

trawl whiting

A name for school whiting, silvery white fish with a stripe along the side which may have rusty brown bars on the upper sides. Mainly caught in inshore waters where they shoal around the southern coasts of Australia. They are firm, white-fleshed fish with pleasant flavour.

tree ear fungus

Cloud ear fungus that grows on dead wood, available fresh or dried. If fresh they have a bland flavour but take up the flavour of the foods with which they are cooked. They should not be fried as they explode, but should be stewed for at least an hour. If dried they are black and are broken into small pieces. They swell hugely when soaked. Dried mushrooms may also be ground to a powder, in which form it may be used to flavour soups and stocks.
